Ingredients
  

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/4 cup barbecue sauce
  • 1/2 cup onion finely chopped
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/2 cup cheddar cheese shredded

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat and sauté the onion until translucent.
  • In a mixing bowl, combine ground beef, breadcrumbs, milk, barbecue sauce, sautéed onion, egg, salt, black pepper, and garlic powder.
  • Mix the ingredients together until well combined.
  • Lightly grease the muffin tin with oil.
  • Evenly divide the meat mixture into the muffin cups.
  • Top each meatloaf muffin with a small amount of cheddar cheese.
  • Bake in the preheated oven for 25 minutes.
  • Remove from oven and let them rest for 5 minutes before serving.

Notes

For extra flavor, try adding a splash of Worcestershire sauce to the meat mixture. If you prefer a sweeter taste, use honey barbecue sauce. To ensure even cooking, make sure the meat mixture is evenly distributed and not packed too tightly in the muffin tin. These muffins are perfect for meal prep and can be stored in the refrigerator for up to three days or frozen for longer storage.
