Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 red bell pepper diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 cans kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 tablespoon tomato paste
  • 1 bay leaf

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until it becomes translucent.
  • Stir in minced garlic and cook for one more minute.
  • Add sliced carrots, celery, and diced bell pepper to the pot.
  • Season with salt, black pepper, paprika, and thyme.
  • Cook the vegetables for about 5 minutes until they begin to soften.
  • Add kidney beans, black beans, vegetable broth, diced tomatoes, tomato paste, and bay leaf.
  • Stir well to combine all ingredients.
  • Bring the stew to a boil, then reduce heat to low.
  • Cover the pot and let the stew simmer for 45 minutes.
  • Remove the bay leaf before serving.
  • Let the stew rest for 10 minutes before serving.

Notes

To enhance the flavor of the bean stew, consider adding a splash of vinegar or a squeeze of lemon juice just before serving to add brightness to the dish. Additionally, this stew can be made in advance and tastes even better the next day as the flavors meld. Feel free to customize the recipe by adding other vegetables or spices to suit your taste preferences.
