Beef Bourguignon Recipe

Equipment

Ingredients
  

  • 2 pounds beef chuck cut into 2-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons olive oil
  • 8 ounces bacon diced
  • 1 large onion chopped
  • 2 carrots sliced
  • 3 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 3 cups red wine preferably Burgundy
  • 2 cups beef stock
  • 1 tablespoon tomato paste
  • 1 bouquet garni parsley, thyme, bay leaf
  • 1 pound pearl onions peeled
  • 1 pound mushrooms quartered
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Preheat the oven to 325°F (165°C).
  • Season the beef cubes with salt and pepper.
  • Heat 2 tablespoons of olive oil in a Dutch oven over medium-high heat and brown the beef in batches.
  • Remove the beef and set aside in a large bowl.
  • In the same pot, add bacon and cook until crispy, then remove with a slotted spoon.
  • Add chopped onion and carrots to the pot, cooking until softened.
  • Stir in minced garlic and cook for an additional minute.
  • Sprinkle flour over the vegetables and stir to coat.
  • Pour in the red wine and beef stock, scraping up any browned bits from the bottom.
  • Add tomato paste and bouquet garni to the pot.
  • Return the beef and bacon to the pot, ensuring the beef is submerged.
  • Cover the pot and transfer to the preheated oven for 2.5 hours.
  • In a separate skillet, heat remaining olive oil and butter, sauté pearl onions and mushrooms until golden.
  • Add sautéed onions and mushrooms to the pot for the last 30 minutes of cooking.
  • Once cooked, remove from oven, discard bouquet garni, and let it rest for 10 minutes.
  • Garnish with chopped parsley before serving.

Notes

When choosing beef, opt for well-marbled cuts like chuck for a tender, flavorful result. To save time, consider prepping your vegetables and measuring out your ingredients before you start cooking. If possible, make the dish a day ahead to allow flavors to meld overnight, enhancing the depth of taste.
