Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 1 can diced tomatoes 14.5 ounces
  • 2 cups cabbage chopped
  • 2 carrots sliced
  • 2 potatoes diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 bay leaf

Instructions
 

  • Heat the large pot over medium heat and add the ground beef, cooking until browned.
  • Add the diced onion and minced garlic to the pot and sauté until the onion is translucent.
  • Pour in the beef broth and diced tomatoes, stirring to combine.
  • Add the chopped cabbage, sliced carrots, and diced potatoes to the pot.
  • Season the mixture with salt, black pepper, paprika, and add the bay leaf.
  • Bring the soup to a boil, then reduce the heat to low and let it simmer for 45 minutes.
  • Remove the bay leaf before serving.
  • Let the soup rest for 10 minutes before ladling into bowls.

Notes

For a richer flavor, consider browning the beef in batches to ensure it caramelizes well. If you prefer a thicker soup, you can mash some of the potatoes against the side of the pot while it simmers. Adjust the seasoning to taste, and feel free to add other vegetables such as celery or bell peppers for more variety.
