  • 1 measuring cup
  • 1 strainer

Ingredients
  

  • 1 pound beef shank cubed
  • 8 cups water
  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 2 star anise pods
  • 1 cinnamon stick
  • 1 tablespoon ginger sliced
  • 4 green onions chopped
  • 1 packet dried noodles
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Heat oil in a large pot over medium heat.
  • Add beef shank and brown on all sides.
  • Remove beef and set aside.
  • In the same pot, sauté onion and garlic until fragrant.
  • Add beef back to the pot.
  • Pour in water and add soy sauce, sugar, star anise, cinnamon, and ginger.
  • Bring to a boil, then reduce heat and simmer for 2 hours.
  • In the last 10 minutes of cooking, add green onions.
  • Cook noodles according to package instructions.
  • Strain the soup and discard the spices.
  • Serve soup over cooked noodles.
  • Garnish with cilantro.
  • Let the dish rest for 10 minutes before serving.

Notes

For the best results, ensure the beef is simmered slowly to achieve tenderness and allow the spices to infuse deeply into the broth. Adjust the seasoning by tasting the soup periodically, and remember that the noodles will absorb some of the saltiness. Fresh cilantro adds a bright finish to this hearty dish.
