Ingredients
  

  • 1 pound ground beef
  • 2 tablespoon olive oil
  • 1 cup onion chopped
  • 1 cup green bell pepper chopped
  • 1 cup red bell pepper chopped
  • 2 clove garlic minced
  • 1 can diced tomatoes 14.5 ounces
  • 1 can tomato sauce 15 ounces
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cup beef broth
  • 1 cup uncooked rice
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef to the pot and cook until browned, breaking it apart with a wooden spoon.
  • Remove the beef and set aside, then add onion, green bell pepper, red bell pepper, and garlic to the pot.
  • Sauté vegetables until softened, about 5 minutes.
  • Return the beef to the pot and stir in diced tomatoes and tomato sauce.
  • Season the mixture with Italian seasoning, salt, and black pepper.
  • Pour in beef broth and bring the mixture to a boil.
  • Add rice to the pot and reduce heat to low.
  • Simmer the soup for 20 minutes, or until the rice is cooked through.
  • Remove the pot from heat and let it rest for 5 minutes.
  • Stir in fresh parsley before serving.

Notes

For a richer flavor, consider using fire-roasted tomatoes instead of regular diced tomatoes. You can substitute the ground beef with turkey or chicken for a leaner option. Adjust seasoning to taste and feel free to add a pinch of red pepper flakes for extra heat. If you prefer a thicker soup, reduce the beef broth by half a cup.
