Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 2 clove garlic minced
  • 2 tablespoon taco seasoning
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 cup beef broth
  • 1 cup water
  • Salt and pepper to taste
  • shredded cheese optional topping
  • sour cream optional topping
  • chopped cilantro optional topping
  • tortilla chips optional topping

Instructions
 

  • Heat a large pot over medium heat and brown the ground beef.
  • Add the diced onion and minced garlic to the pot, and cook until the onion is translucent.
  • Stir in the taco seasoning and cook for 1 minute.
  • Add the black beans, corn, diced tomatoes, tomato sauce, beef broth, and water.
  • Stir to combine and bring the mixture to a simmer.
  • Reduce heat to low, cover the pot, and let it cook for 20 minutes.
  • Taste and adjust seasoning with salt and pepper as needed.
  • Remove from heat and let the soup rest for 5 minutes before serving.
  • Serve hot with your choice of optional toppings.

Notes

For a thicker consistency, you can mash some of the beans before adding them to the soup. If you prefer a spicy kick, consider adding a diced jalapeño or a pinch of cayenne pepper. This soup can be easily customized with different beans or added vegetables, like bell peppers or zucchini. It also freezes well, making it a great option for meal prepping.
