Ingredients
  

  • 4 medium beets
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 100 grams feta cheese crumbled
  • 1/4 cup walnuts toasted and chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • 2 cups mixed greens
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Wrap each beet individually in aluminum foil and place them on a baking sheet.
  • Roast the beets in the oven for 45 minutes or until tender.
  • Allow the beets to cool for 10 minutes, then peel and slice them.
  • In a large mixing bowl, whisk together olive oil, balsamic vinegar, honey, lemon juice, salt, and black pepper.
  • Add the sliced beets to the bowl and toss them with the dressing.
  • Add the mixed greens, crumbled feta cheese, and chopped walnuts to the bowl.
  • Gently toss all the ingredients together until well combined.
  • Transfer the salad to a serving platter and sprinkle with fresh parsley.
  • Serve the salad chilled or at room temperature.

Notes

For the best results, ensure the beets are evenly roasted to achieve a tender texture and enhance their natural sweetness. If time allows, prepare the dressing in advance and let it sit for a while to meld the flavors together. Additionally, feel free to adjust the salad's sweetness and acidity by varying the amounts of honey and lemon juice according to your taste preferences.
