Ingredients
  

  • 2 cups mixed berries fresh or frozen
  • 1 cup granulated sugar divided
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease the baking dish with butter or non-stick spray.
  • In a mixing bowl, combine 1/2 cup of sugar, flour, baking powder, and salt.
  • Whisk in milk, melted butter, and vanilla extract until smooth.
  • Pour the batter into the prepared baking dish.
  • Spread the mixed berries over the batter evenly.
  • Sprinkle the remaining 1/2 cup of sugar over the berries.
  • Bake in the preheated oven for 30 minutes or until golden brown.
  • Remove the cobbler from the oven and let it rest for 10 minutes before serving.

Notes

For best results, use a mix of your favorite berries such as blueberries, raspberries, and strawberries. If using frozen berries, do not thaw them before adding to the batter to avoid excess moisture. Serve the cobbler warm with a scoop of vanilla ice cream or a dollop of whipped cream for a delicious contrast of temperatures and flavors.
