Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 medium carrots sliced
  • 2 stalks celery sliced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 8 ounces egg noodles
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic and sauté until the onion is translucent.
  • Stir in the sliced carrots and celery and cook for 5 minutes.
  • Pour in the chicken broth and bring to a boil.
  • Add the chicken breasts and reduce the heat to a simmer.
  • Cook the chicken for 15 minutes or until fully cooked.
  • Remove the chicken from the pot and shred it with a fork.
  • Return the shredded chicken to the pot.
  • Add the egg noodles, salt, black pepper, and dried thyme to the pot.
  • Simmer until the noodles are tender, about 8 minutes.
  • Stir in the fresh parsley and adjust seasoning if needed.
  • Remove from heat and let the soup rest for 10 minutes before serving.

Notes

For extra depth of flavor, consider adding a splash of lemon juice or a pinch of cayenne pepper just before serving. You can also use homemade chicken broth for a richer taste, and feel free to add more vegetables like peas or corn for additional texture and nutrients.
