Equipment

  • 1 measuring cup
  • 1 measuring spoon set
  • 1 potato masher or immersion blender

Ingredients
  

  • 6 cups potatoes peeled and diced
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 2 cups cheddar cheese shredded
  • 1/2 cup bacon cooked and crumbled
  • 1/4 cup green onions chopped
  • 2 tablespoons butter

Instructions
 

  • Place the diced potatoes, chopped onions, minced garlic, and chicken broth into the crockpot.
  • Add salt, black pepper, and thyme to the crockpot.
  • Cover and cook on high for 4 hours or until the potatoes are tender.
  • Use a potato masher or immersion blender to mash the potatoes until desired consistency is reached.
  • Stir in the heavy cream and shredded cheddar cheese until well blended.
  • Add the butter and stir until melted and combined.
  • Allow the soup to rest for 10 minutes to thicken slightly.
  • Serve hot, garnished with crumbled bacon and chopped green onions.

Notes

For a creamier texture, use an immersion blender to blend the soup completely smooth. If you prefer a thicker soup, mix a tablespoon of cornstarch with two tablespoons of cold water and stir it into the soup before adding the cheese. Always taste and adjust the seasoning according to your preference before serving.
