Ingredients
  

  • 1 cup All-purpose flour
  • 2 tablespoons Granulated sugar
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 3/4 cup Milk
  • 1 Egg
  • 2 tablespoons Unsalted butter melted
  • 1 teaspoon Vanilla extract

Instructions
 

  • In a medium mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, combine milk, egg, melted butter, and vanilla extract until well blended.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined; it's okay if the batter is a bit lumpy.
  • Let the batter rest for 5 minutes to activate the baking powder.
  • Preheat a non-stick skillet or griddle over medium heat.
  • Lightly grease the skillet with butter or oil.
  • Use a ladle to pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook the pancakes until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancakes and cook for another 1-2 minutes until golden brown.
  • Repeat with the remaining batter, greasing the skillet as needed.

Notes

For extra fluffy pancakes, ensure not to overmix the batter as this can deflate the air bubbles that help the pancakes rise. Using a non-stick skillet or griddle at the right temperature is crucial; too hot and the pancakes might burn, too cool and they won't cook through. Serve immediately for the best texture and flavor.
