Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 can tomato sauce 15 ounces
  • 1 can diced tomatoes 14.5 ounces
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat and add ground beef, cooking until browned.
  • Add diced onion and minced garlic to the pot, sautéing until the onion is translucent.
  • Pour in chicken broth, tomato sauce, and diced tomatoes, stirring to combine.
  • Season the mixture with Italian seasoning, salt, and black pepper.
  • Bring the soup to a boil and add the broken lasagna noodles.
  • Reduce heat and simmer for 15 minutes, stirring occasionally until noodles are tender.
  • In a small bowl, mix ricotta cheese with a pinch of salt and pepper.
  • Serve the soup in bowls, topping each with a dollop of the ricotta mixture.
  • Sprinkle shredded mozzarella and grated Parmesan cheese over the top.
  • Garnish with fresh basil before serving.

Notes

To enhance the flavor, you can add a splash of red wine to the soup as it simmers. If you prefer a spicier kick, consider adding red pepper flakes while cooking. For a thicker soup, feel free to add more noodles, but be sure to adjust the broth accordingly.
