Equipment

  • 1 Whisk
  • 1 Medium saucepan
  • 1 Baking dish 9x13 inches
  • 1 Rubber spatula
  • 1 Knife

Ingredients

  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 3 large egg yolks lightly beaten
  • 2 teaspoons vanilla extract
  • 1 box Nilla wafers 11 ounces
  • 4-5 ripe bananas sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  • In a medium saucepan, whisk together the sugar, flour, and salt.
  • Gradually whisk in the milk and cook over medium heat, stirring constantly until thickened.
  • Once thickened, remove from heat and stir in a small amount of the hot mixture into the egg yolks to temper them.
  • Return the yolk mixture to the saucepan, stirring constantly, and cook for another 2 minutes.
  • Remove from heat and stir in the vanilla extract.
  • In a 9x13 inch baking dish, layer one-third of the Nilla wafers followed by one-third of the banana slices.
  • Pour one-third of the pudding over the bananas and spread evenly.
  • Repeat the layers twice more, ending with pudding on top.
  • Cover with plastic wrap and refrigerate for at least 2 hours.
  • Before serving, whip the heavy cream with the powdered sugar until soft peaks form.
  • Spread or pipe the whipped cream over the pudding and serve.

Notes

For best results, use ripe bananas for a naturally sweet flavor and ensure the pudding is thickened properly on the stove to prevent a runny consistency. Additionally, allowing the dessert to rest in the refrigerator not only enhances the flavors but also improves the texture.
