Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a loaf pan and set aside.
  • In a medium mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  • In a large mixing bowl, combine the pumpkin puree, vegetable oil, eggs, granulated sugar, brown sugar, milk, and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let it cool in the pan for 10 minutes.
  • Transfer the loaf to a wire rack to cool completely before slicing.

Notes

For perfect pumpkin bread, make sure not to overmix the batter as this can lead to a denser loaf. You can also add chopped nuts or chocolate chips for added texture and flavor. If you prefer a sweeter bread, you can increase the sugar slightly or drizzle a simple glaze over the cooled loaf.
