Black Raspberry Cobbler

Ingredients
  

  • 4 cup fresh black raspberries
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 cup milk
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C). In a medium mixing bowl, combine the black raspberries, 1/2 cup of sugar, and lemon juice, and set aside.
  • In a large mixing bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt.
  • Add the melted butter, milk, and vanilla extract to the dry ingredients and stir until just combined.
  • Pour the batter into the greased 9x13 inch baking dish.
  • Spoon the raspberry mixture evenly over the batter.
  • Bake in the preheated oven for 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Allow the cobbler to rest for 10 minutes before serving.

Notes

For best results, use fresh black raspberries when they are in season, and if they are unavailable, substitute with frozen ones, making sure to thaw and drain them before use. Adjust the sugar based on the sweetness of the berries, and for an extra touch, serve the cobbler with a scoop of vanilla ice cream or a dollop of whipped cream.
