Ingredients
  

  • 3 pounds beef short ribs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 3 carrots cut into chunks
  • 2 stalks celery chopped

Instructions
 

  • Season the beef short ribs with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the short ribs on all sides until browned, then transfer to the crockpot.
  • In the same skillet, add onion and garlic, sauté until softened.
  • Stir in tomato paste and cook for another minute.
  • Pour beef broth and red wine into the skillet, scraping up any browned bits.
  • Add Worcestershire sauce, thyme, and bay leaves to the liquid.
  • Transfer the liquid mixture to the crockpot over the short ribs.
  • Add carrots and celery to the crockpot.
  • Cover and cook on low for 8 hours or until ribs are tender.
  • Remove the short ribs and vegetables from the crockpot and let them rest for 10 minutes before serving.

Notes

For best results, ensure the short ribs are evenly browned to enhance the flavor of the dish. You can also adjust the seasoning to your liking by adding more herbs and spices. For a thicker sauce, you can reduce the liquid in a saucepan after cooking.
