Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups pecans chopped and toasted

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy using an electric mixer.
  • Add the eggs one at a time to the mixture, beating well after each addition.
  • Stir in the vanilla extract until combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chopped and toasted pecans using a spatula.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  • Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
  • Let the cookies cool completely on the cooling rack before serving or storing.

Notes

Make sure the butter is softened to ensure a smooth mixture when creaming with the sugars. Toasting the pecans enhances their flavor and adds a delightful crunch to the cookies. Chilling the dough for at least 30 minutes before baking can help prevent the cookies from spreading too much, resulting in a thicker, chewier texture.
