Ingredients
  

  • 1 pound steak cut into bite-sized pieces
  • 2 tablespoons butter
  • 4 cloves garlic minced
  • 1 pound baby potatoes halved
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon parsley chopped (for garnish)

Instructions
 

  • Heat olive oil in the large skillet over medium heat.
  • Add the halved baby potatoes to the skillet and season with salt and black pepper.
  • Cook the potatoes, stirring occasionally, until they are golden and tender, about 10 minutes.
  • Remove the potatoes from the skillet and set aside.
  • In the same skillet, add butter and let it melt.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the steak bites to the skillet, spreading them out evenly.
  • Cook the steak bites for about 3-4 minutes, stirring occasionally, until they are browned and cooked to desired doneness.
  • Add the chopped rosemary and thyme to the skillet and stir to combine.
  • Return the cooked potatoes to the skillet and mix with the steak and herbs.
  • Taste and adjust seasoning with more salt and pepper if needed.
  • Remove the skillet from heat and let the dish rest for 5 minutes.
  • Transfer the steak bites and potatoes to a serving platter.
  • Garnish with chopped parsley before serving.

Notes

For a more robust flavor, consider marinating the steak bites in olive oil, garlic, and herbs for at least 30 minutes before cooking. If you prefer your potatoes extra crispy, you can pre-boil them for a few minutes before adding them to the skillet. Adjust the amount of garlic and herbs according to your taste preference for a personalized touch.
