Ingredients
  

  • 2 cup butternut squash peeled and cubed
  • 2 cup potatoes peeled and cubed
  • 2 tablespoon butter
  • 1/4 cup milk
  • salt to taste
  • pepper to taste
  • 3 tablespoon honey
  • 2 clove garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Boil the butternut squash and potatoes in a large pot of salted water until tender, about 20 minutes.
  • Drain the squash and potatoes and return them to the pot.
  • Add butter and milk to the pot, then mash until smooth.
  • Season with salt and pepper to taste.
  • In a medium saucepan, heat olive oil over medium heat.
  • Add minced garlic and sauté until fragrant, about 1 minute.
  • Stir in honey and lemon juice, then simmer for 2 to 3 minutes.
  • Pour the honey garlic sauce over the mashed squash and potatoes.
  • Garnish with fresh parsley before serving.
  • Let the dish rest for 5 minutes to allow flavors to meld.

Notes

For the best results, use a combination of starchy and waxy potatoes to achieve a creamy texture. You can also adjust the sweetness of the sauce by varying the amount of honey according to your taste preference. Make sure to taste and season the mashed potatoes as needed for a well-balanced flavor.
