Ingredients
  

  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 medium green bell pepper chopped
  • 1 medium red bell pepper chopped
  • 1 small head cabbage chopped
  • 1 can 14.5 ounces diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic to the pot and sauté until softened.
  • Add carrots, celery, green bell pepper, and red bell pepper to the pot and cook for a few minutes.
  • Stir in the chopped cabbage and cook until it begins to wilt.
  • Add diced tomatoes and vegetable broth to the pot and stir well.
  • Season with basil, oregano, salt, and black pepper.
  • Bring the soup to a boil, then reduce the heat to a simmer.
  • Cover the pot and let the soup simmer for about 30 minutes or until vegetables are tender.
  • Taste and adjust seasoning if necessary before serving.

Notes

For extra flavor, you can add a dash of lemon juice or apple cider vinegar just before serving. This soup is versatile, so feel free to add other vegetables or herbs you enjoy. It's best served hot and can be stored in the refrigerator for up to a week, making it a great meal prep option.
