  • 1 sharp knife
  • 1 Wooden spoon

Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium cabbage chopped
  • 3 medium potatoes peeled and diced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf
  • 2 tablespoons parsley chopped (for garnish)

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic and sauté until the onion is translucent.
  • Stir in the chopped cabbage and diced potatoes.
  • Pour in the vegetable broth and bring the mixture to a boil.
  • Add salt, black pepper, thyme, and the bay leaf to the pot.
  • Reduce heat to low and let the soup simmer for 30-35 minutes or until potatoes are tender.
  • Remove the bay leaf from the soup and discard it.
  • Taste and adjust seasoning as needed.
  • Let the soup rest for 5 minutes off the heat.
  • Serve hot, garnished with chopped parsley.

Notes

For a creamier texture, you can blend part of the soup before serving. Always taste and adjust the seasoning at the end to ensure the flavors are well balanced. If you prefer a spicier kick, consider adding a pinch of cayenne pepper.
