Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 3 clove garlic minced
  • 1 medium cabbage chopped
  • 2 large carrots sliced
  • 1 can diced tomatoes 14.5 ounces
  • 4 cup beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and cook until browned, breaking it apart with a wooden spoon.
  • Remove beef from the pot and set aside.
  • In the same pot, add onion and garlic, sautéing until translucent.
  • Add chopped cabbage and carrots to the pot and stir to combine.
  • Pour in diced tomatoes and beef broth, then return the ground beef to the pot.
  • Season with salt, pepper, thyme, and add the bay leaf.
  • Bring the mixture to a boil, then reduce heat to simmer for 30 minutes.
  • Remove the bay leaf before serving.
  • Let the soup rest for 5 minutes off the heat before ladling into bowls.

Notes

For extra flavor, consider adding a splash of vinegar or a sprinkle of parmesan cheese before serving. If you prefer a thicker soup, you can simmer it longer to reduce the broth or add a tablespoon of tomato paste during cooking. Adjust seasoning to taste, as different brands of broth can vary in saltiness.
