Ingredients
  

  • 2 cups chopped romaine lettuce
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup croutons
  • 1 pound boneless chicken breast
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices whole-grain bread
  • 2 tablespoons butter softened

Instructions
 

  • Preheat the grill pan over medium heat.
  • Coat the chicken breasts with olive oil, salt, and pepper.
  • Grill the chicken for 5-6 minutes on each side or until cooked through.
  • Remove chicken from the grill and let it rest for 5 minutes before slicing.
  • In a mixing bowl, combine the chopped romaine lettuce, Caesar dressing, Parmesan cheese, and croutons.
  • Butter one side of each bread slice.
  • Place buttered side down, add a layer of Caesar salad on four slices of bread.
  • Top the salad with slices of grilled chicken.
  • Cover with the remaining slices of bread, buttered side up.
  • Grill the sandwiches on the pan until golden brown on each side.
  • Slice sandwiches in half and serve on a plate.

Notes

For an extra crunch, consider toasting the croutons in the oven before adding them to the salad. If you prefer a spicier flavor, add a dash of hot sauce to the Caesar dressing. Always allow the chicken to rest after grilling to ensure the juices redistribute, making the meat juicier when sliced.
