Cajun Chicken Pasta Soup

Equipment

  • 1 Cutting board
  • 1 Chef's knife
  • 1 Wooden spoon
  • 1 measuring cup
  • 1 Measuring spoons set

Ingredients
  

  • 2 tablespoon olive oil
  • 1 pound chicken breast cubed
  • 1 tablespoon Cajun seasoning
  • 1 onion diced
  • 2 clove garlic minced
  • 1 bell pepper diced
  • 2 stalk celery diced
  • 4 cup chicken broth
  • 1 cup heavy cream
  • 8 ounce pasta uncooked
  • 1/2 cup Parmesan cheese grated
  • Salt and pepper to taste
  • 2 tablespoon parsley chopped for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add cubed chicken and Cajun seasoning, cooking until chicken is browned.
  • Remove chicken from the pot and set aside.
  • In the same pot, sauté onion, garlic, bell pepper, and celery until softened.
  • Pour in chicken broth and bring to a boil.
  • Stir in the heavy cream and bring back to a simmer.
  • Add uncooked pasta and cook until al dente.
  • Return the chicken to the pot and simmer for 5 more minutes.
  • Stir in Parmesan cheese until melted and combined.
  • Season with salt and pepper to taste.
  • Let soup rest for 5 minutes before serving.
  • Garnish with chopped parsley before serving.

Notes

For a spicier soup, add extra Cajun seasoning or a pinch of cayenne pepper. You can substitute the chicken broth with vegetable broth for a different flavor profile. Make sure to stir occasionally while cooking the pasta to prevent sticking to the bottom of the pot.
