Cajun Potato Soup

Ingredients
  

  • 4 tablespoon butter
  • 1 cup onion diced
  • 1 cup celery diced
  • 1 cup green bell pepper diced
  • 2 clove garlic minced
  • 4 cup potatoes peeled and diced
  • 4 cup chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Melt the butter in a large pot over medium heat.
  • Add the onion, celery, and green bell pepper and sauté until softened, about 5 minutes.
  • Stir in the garlic and cook for another minute until fragrant.
  • Add the diced potatoes, chicken broth, Cajun seasoning, salt, and black pepper to the pot.
  • Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes or until the potatoes are tender.
  • Stir in the heavy cream and simmer for another 5 minutes.
  • Remove the pot from the heat and let the soup rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

To enhance the flavors, consider making your own Cajun seasoning blend if you have the spices on hand. Additionally, for a heartier texture, you can partially mash the potatoes in the pot before adding the cream. Adjust the seasoning to taste after simmering, as the flavors develop during cooking.
