Ingredients
  

  • 4 cups apples peeled, cored, and diced
  • 2 cups granulated sugar
  • 1/4 cup brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup lemon juice
  • 1/2 cup water
  • 1/2 teaspoon vanilla extract

Instructions
 

  • In a large saucepan, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and water.
  • Stir the mixture over medium heat until the sugar dissolves and the apples begin to release their juices.
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.
  • Use a wooden spoon to gently mash some of the apples as they soften.
  • Continue to cook until the mixture thickens and reaches a jam-like consistency.
  • Remove the saucepan from the heat and stir in the vanilla extract.
  • Ladle the hot jam into sterilized jars using a canning funnel, leaving about 1/4 inch space at the top.
  • Seal the jars with their lids and allow them to cool at room temperature for 12 hours.
  • Store the jars in a cool, dark place or in the refrigerator once cooled.

Notes

For the best results, choose a variety of apples that have a good balance of sweetness and tartness to enhance the flavor of the jam. Ensure that your jars are properly sterilized before filling to prevent any spoilage, and remember to check the consistency of the jam before removing it from the heat, as it will thicken slightly as it cools.
