Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 3 tablespoons granulated sugar
  • 1 cup granulated sugar
  • 0.25 cup water
  • 0.5 cup heavy cream
  • 2 bananas sliced
  • 3 cups whole milk
  • 0.75 cup granulated sugar
  • 0.25 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream whipped
  • 2 tablespoons powdered sugar

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Mix graham cracker crumbs, melted butter, and 3 tablespoons sugar in a bowl.
  • Press the mixture into a pie pan to form the crust.
  • Bake the crust for 10 minutes and let it cool.
  • In a saucepan, combine 1 cup sugar and water, then cook until golden caramel forms.
  • Remove from heat and carefully stir in 0.5 cup heavy cream.
  • Add sliced bananas to the caramel and coat them well.
  • In another saucepan, heat milk until simmering.
  • In a bowl, whisk together 0.75 cup sugar, cornstarch, and egg yolks.
  • Gradually pour hot milk into the egg mixture, whisking constantly.
  • Return the mixture to the saucepan and cook, whisking until thickened.
  • Stir in vanilla extract and let the custard cool.
  • Spread caramelized bananas over the cooled crust.
  • Pour the custard over the bananas and smooth the top.
  • Chill the pie in the refrigerator for at least 2 hours.
  • Whip cream with powdered sugar until stiff peaks form.
  • Top the chilled pie with whipped cream before serving.

Notes

For a smoother custard, make sure to continuously whisk the mixture to avoid lumps. It's important to let the pie chill thoroughly to allow the flavors to meld and the custard to set properly. If you prefer a more decorative look, you can use a piping bag to pipe the whipped cream on top of the pie.
