Ingredients
  

  • 3 Large ripe bananas mashed
  • 1 Cup all-purpose flour
  • 1/4 Cup sugar
  • 1 Teaspoon baking powder
  • 1/2 Teaspoon ground cinnamon
  • 1/4 Teaspoon salt
  • 1 Teaspoon vanilla extract
  • 1/4 Cup milk
  • 1 Egg beaten
  • 1/2 Cup vegetable oil for frying
  • 1 Tablespoon powdered sugar for garnish (optional)

Instructions
 

  • In a mixing bowl, combine mashed bananas, sugar, cinnamon, salt, vanilla extract, milk, and beaten egg.
  • Gradually add the flour and baking powder to the banana mixture, stirring to form a smooth batter.
  • Heat vegetable oil in a frying pan over medium heat.
  • Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
  • Remove the fritters from the pan and drain on a plate lined with paper towels.
  • Allow the fritters to rest for 5 minutes.
  • Optionally, dust with powdered sugar before serving.

Notes

For best results, ensure the bananas are very ripe, as they will be sweeter and mash more easily. Adjust the heat as necessary to prevent the fritters from burning; they should be cooked through before they become too dark. Serve immediately for the best texture and flavor.
