Chai Fudge Pudding with Spiced Cherry Compote

Ingredients
  

  • 1 cup milk
  • 1 cup heavy cream
  • 3 bag chai tea
  • 1/4 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1 1/2 cup cherries pitted and halved
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Instructions
 

  • Heat the milk and heavy cream in a medium saucepan over medium heat until hot but not boiling.
  • Add the chai tea bags to the hot milk mixture and steep for 5 minutes.
  • Remove the tea bags and return the saucepan to the stove.
  • Whisk in the sugar, cocoa powder, salt, and cornstarch until smooth.
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  • Remove from heat and stir in vanilla extract.
  • Pour the pudding into a mixing bowl, cover with plastic wrap, and refrigerate for at least 1 hour.
  • In a small saucepan, combine cherries, brown sugar, cinnamon, nutmeg, and lemon juice.
  • Cook over medium heat until cherries are soft and the compote has thickened.
  • Let the compote cool slightly before serving it over the chilled pudding.

Notes

When making the pudding, ensure you continuously whisk to prevent lumps from forming. If you prefer a smoother texture, you can strain the pudding before chilling. For the cherry compote, adjust the level of spice to your taste, and if cherries are out of season, frozen cherries can be a suitable substitute.
