Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup brown sugar
  • 1/4 cup coconut oil melted
  • 2 cup milk
  • 1/4 cup chia seeds
  • 1/4 cup sugar
  • 2 teaspoon chai spice mix
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • whipped cream for garnish
  • ground cinnamon for garnish

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Combine rolled oats, almond flour, brown sugar, and melted coconut oil in a mixing bowl.
  • Press the mixture evenly into the pie dish to form the crust.
  • Bake the crust for 10 minutes, then let it cool.
  • In a medium saucepan, combine milk, chia seeds, sugar, chai spice mix, vanilla extract, and salt.
  • Cook over medium heat, whisking constantly until it thickens slightly.
  • Pour the pudding mixture into the cooled oatmeal crust.
  • Refrigerate the pie for at least 4 hours or until fully set.
  • Once set, slice and serve with whipped cream and a sprinkle of ground cinnamon.

Notes

For best results, ensure the chia seeds are evenly distributed in the pudding mixture to achieve a consistent texture. If you prefer a smoother pudding, you can blend the mixture before cooking. Adjust the sweetness to your taste by varying the amount of sugar, and feel free to experiment with different types of milk for a unique flavor profile.
