Ingredients
  

  • 1 sheet Puff pastry thawed
  • 150 grams Fresh spinach chopped
  • 100 grams Feta cheese crumbled
  • 50 grams Ricotta cheese
  • 1 Egg beaten
  • 1 tablespoon Olive oil
  • 1 clove Garlic minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Sesame seeds

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Heat olive oil in a pan over medium heat and sauté garlic until fragrant.
  • Add chopped spinach to the pan and cook until wilted, then remove from heat.
  • In a mixing bowl, combine sautéed spinach, feta cheese, ricotta cheese, salt, and pepper.
  • Roll out the puff pastry on a lightly floured surface to smooth edges.
  • Cut the pastry into equal squares and spoon the spinach mixture onto each square.
  • Fold the pastry over the filling to form a triangle, sealing the edges with a fork.
  • Brush the top of each pastry with beaten egg and sprinkle with sesame seeds.
  • Place the pastries on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 20-25 minutes or until golden brown.
  • Remove from the oven and let them cool for 10 minutes before serving.

Notes

For best results, ensure that the puff pastry is fully thawed before handling, as this will prevent it from cracking. If you prefer a spicier filling, you can add a pinch of chili flakes to the spinach mixture. Additionally, make sure to press the edges of the pastry firmly with a fork to avoid the filling from escaping during baking.
