Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 8 ounces cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions
 

  • Preheat the oven to 325°F (163°C).
  • In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter.
  • Press the mixture evenly into the bottom and sides of the pie pan to form a crust.
  • Bake the crust for 10 minutes, then remove from the oven and let it cool.
  • In another bowl, beat the cream cheese with an electric mixer until smooth.
  • Add 1/2 cup sugar and vanilla to the cream cheese and beat until creamy.
  • Mix in pumpkin puree, then add eggs one at a time, blending well after each.
  • Stir in cinnamon, ginger, nutmeg, and salt.
  • Pour the pumpkin mixture over the cooled crust.
  • Bake in the oven for 50 minutes, or until the center is set.
  • Remove from the oven and let it cool on a wire rack.
  • Refrigerate the pie for at least 4 hours or overnight.
  • Before serving, whip the heavy cream and powdered sugar together until stiff peaks form.
  • Top the chilled pie with whipped cream and serve.

Notes

For best results, ensure the cream cheese is fully softened before mixing to avoid lumps in your cheesecake layer. Allow the pie to chill adequately; overnight resting provides the best flavor and texture. Adjust the spices according to your taste preference for a personalized touch.
