Ingredients
  

  • 1 pound ground beef
  • 4 cups potatoes peeled and diced
  • 1 cup carrots diced
  • 1 cup onion diced
  • 3 cups chicken broth
  • 2 cups milk
  • 2 cups cheddar cheese shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour

Instructions
 

  • In a large pot, brown the ground beef over medium heat, then drain excess fat.
  • Add butter to the pot and melt over medium heat.
  • Stir in the onion and carrots, cooking until the onion is translucent.
  • Sprinkle flour over the vegetables and cook for 2 minutes, stirring constantly.
  • Gradually whisk in chicken broth and bring to a boil.
  • Add potatoes and reduce the heat to simmer, cooking until potatoes are tender.
  • Stir in milk, salt, and pepper, then bring to a gentle simmer.
  • Stir in shredded cheddar cheese until melted and smooth.
  • Return the ground beef to the pot and heat through.
  • Remove from heat and let the soup rest for 5 minutes before serving.

Notes

To enhance the flavor, try using aged cheddar cheese for a richer taste and consider adding a pinch of cayenne pepper or paprika for a mild kick. Always taste and adjust seasoning before serving, as the flavors can develop during cooking. If you prefer a thicker consistency, you can mash some of the potatoes directly in the pot.
