Ingredients
  

  • 6 cup potatoes peeled and diced
  • 2 cup cheddar cheese shredded
  • 1 cup sour cream
  • 1 can cream of chicken soup 10.5 oz
  • 1/2 cup butter melted
  • 1/4 cup onion finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cornflakes crushed

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the diced potatoes, cheddar cheese, sour cream, cream of chicken soup, melted butter, chopped onion, salt, and black pepper.
  • Mix the ingredients until they are well combined.
  • Transfer the potato mixture into a 9x13 inch baking dish, spreading it evenly.
  • Sprinkle the crushed cornflakes evenly over the top of the potato mixture.
  • Bake in the preheated oven for 1 hour, or until the top is golden brown and the potatoes are tender.
  • Remove from the oven and let the casserole rest for 10 minutes before serving.

Notes

For best results, ensure that the potatoes are diced evenly to ensure uniform cooking. You can substitute the cream of chicken soup with cream of mushroom for a different flavor profile. If you prefer a spicier dish, consider adding a pinch of cayenne pepper or a dash of hot sauce to the mixture before baking. Adjust the cheese type to your preference; a combination of cheddar and mozzarella can add a delightful stringy texture.
