Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 red bell pepper chopped
  • 3 cups vegetable broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the sliced carrots, celery, and chopped red bell pepper to the pot.
  • Cook the vegetables until they start to soften, about 5 minutes.
  • Pour in the vegetable broth and bring to a boil.
  • Reduce the heat, cover, and let it simmer for 15 minutes.
  • Stir in the broccoli and cauliflower florets, cooking until tender.
  • Add the milk and shredded cheddar cheese.
  • Stir until the cheese is melted and the soup is creamy.
  • Season with salt, black pepper, and dried thyme.
  • Simmer for an additional 5 minutes, stirring occasionally.
  • Remove from heat and let the soup rest for 5 minutes before serving.

Notes

For best results, ensure that the vegetables are uniformly cut to ensure even cooking. If you prefer a smoother soup, you can use an immersion blender to blend part of the soup before adding the cheese. Adjust the seasoning to taste, and feel free to add other herbs or spices for extra flavor.
