Ingredients
  

  • 1 cup Unsalted butter softened
  • 1 1/2 cups Granulated sugar
  • 1 Large egg
  • 2 teaspoons Vanilla extract
  • 2 3/4 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1/4 cup Granulated sugar for rolling

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter and 1 1/2 cups of granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Use a cookie scoop to form dough balls and roll them in the 1/4 cup of granulated sugar.
  • Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 8-10 minutes, until the edges are set and the centers are soft.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For the best chewy texture, avoid overbaking the cookies; they should look slightly underbaked in the center when removed from the oven. Ensure all ingredients, especially the butter, are at room temperature for easy mixing. If you prefer a crispier edge, extend the baking time by 1-2 minutes, but watch closely to prevent overbrowning.
