Ingredients
  

  • 1/2 cup chia seeds
  • 2 cups almond milk
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions
 

  • In a medium mixing bowl, whisk together almond milk, cocoa powder, maple syrup, vanilla extract, and salt until well combined.
  • Add chia seeds to the mixture and stir well to ensure they are evenly distributed.
  • Let the mixture sit for about 10 minutes, then stir again to break up any chia seed clumps.
  • Cover the bowl with a lid or transfer the mixture to an airtight container, then refrigerate for at least 2 hours or overnight.
  • Once the pudding has thickened, stir again before serving.
  • Divide the pudding into serving cups and garnish as desired.

Notes

For a creamier texture, consider using coconut milk or a thicker plant-based milk instead of almond milk. Adjust the level of sweetness by adding more or less maple syrup according to your taste. For added flavor, consider mixing in a pinch of cinnamon or a dash of espresso powder with the cocoa. This pudding can be stored in the refrigerator for up to 5 days, making it a great make-ahead dessert option.
