Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound chicken breast cubed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat.
  • Season the cubed chicken with salt and black pepper.
  • Add the seasoned chicken to the skillet and cook until browned, about 5-7 minutes.
  • Remove the chicken and set aside.
  • In the same skillet, add chopped onion and minced garlic, sauté until translucent.
  • Add fresh spinach to the skillet and cook until wilted.
  • In a medium mixing bowl, whisk together heavy cream and chicken broth.
  • Stir in shredded mozzarella cheese, grated Parmesan cheese, and dried Italian herbs into the cream mixture.
  • Return chicken to the skillet and pour the cream mixture over the chicken and spinach.
  • Transfer the mixture into an oven-safe casserole dish.
  • Bake in the preheated oven for 20 minutes until bubbly and golden on top.
  • Let the casserole rest for 5 minutes before serving.

Notes

For extra flavor, consider adding a pinch of nutmeg to the cream sauce, which complements the spinach beautifully. Additionally, using a mix of cheeses like cheddar or gouda along with mozzarella can enhance the flavor profile. Ensure the chicken is cooked through before transferring to the casserole dish to avoid undercooked meat.
