Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound chicken breast diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 3 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 teaspoon paprika

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced chicken, salt, and pepper, cooking until chicken is browned.
  • Remove chicken and set aside.
  • In the same pot, add onion and garlic, sautéing until onion is translucent.
  • Sprinkle flour over the onion mixture and whisk to combine.
  • Slowly pour in chicken broth, whisking constantly to avoid lumps.
  • Bring the mixture to a simmer and add broccoli florets.
  • Cook until broccoli is tender, about 10 minutes.
  • Stir in shredded cheddar cheese until melted and smooth.
  • Return the cooked chicken to the pot.
  • Pour in heavy cream and add paprika, stirring to combine.
  • Simmer for an additional 5 minutes to meld flavors.
  • Let soup rest for 5 minutes before serving.

Notes

For the best results, use fresh broccoli and good-quality cheddar cheese for a richer flavor. If the soup becomes too thick, you can thin it with a little more chicken broth. Adjust seasoning to taste and serve with crusty bread for a complete meal.
