Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 pound chicken breast cut into small cubes
  • 4 cups chicken broth
  • 2 cups broccoli florets
  • 1 cup carrots sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic to the pot and sauté until softened.
  • Stir in chicken breast cubes and cook until lightly browned.
  • Pour in chicken broth and bring to a boil.
  • Add broccoli florets and sliced carrots to the pot.
  • Season with salt and black pepper, then simmer for 15 minutes.
  • Stir in heavy cream and cook for an additional 5 minutes.
  • Remove pot from heat and let soup rest for 5 minutes.
  • Ladle soup into bowls and garnish with fresh parsley before serving.

Notes

For a creamier texture, consider blending a portion of the soup before adding the heavy cream, or substitute the heavy cream with a dairy-free alternative for a lighter version. Always taste and adjust the seasoning according to your preference, and feel free to add other vegetables like celery or potatoes for added flavor and texture.
