Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion chopped
  • 2 clove garlic minced
  • 2 medium carrots sliced
  • 2 stalk celery sliced
  • 1 pound chicken breast cubed
  • 4 cup chicken broth
  • 1/2 head cabbage shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, sautéing for 3 minutes until fragrant.
  • Stir in the sliced carrots and celery, cooking for an additional 5 minutes.
  • Add the cubed chicken breast to the pot and cook until browned on all sides.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Add the shredded cabbage, salt, black pepper, thyme, and bay leaf to the pot.
  • Reduce the heat to low and let the soup simmer for 30 minutes.
  • Remove the bay leaf and adjust seasonings to taste.
  • Let the soup rest for 5 minutes before serving.

Notes

For a richer flavor, consider using bone-in chicken pieces and remove them before serving. You can also add a splash of lemon juice or vinegar at the end of cooking to brighten the flavors. Serve with crusty bread for a complete meal. Adjust the thickness of the soup by adding more or less broth according to your preference.
