Ingredients
  

  • 2 cup cooked chicken breast shredded
  • 1/2 cup Caesar dressing creamy
  • 1/3 cup Parmesan cheese finely grated
  • 1 cup Romaine lettuce finely chopped
  • 1/2 cup cherry tomatoes finely diced
  • 1/4 cup red onion finely minced
  • 1 tablespoon lemon juice fresh
  • 1/2 teaspoon black pepper freshly ground
  • 1/4 teaspoon kosher salt
  • 4 large flour tortillas 10-inch
  • 1/2 cup mozzarella cheese shredded
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • In a medium bowl, combine shredded chicken, Caesar dressing, Parmesan, lemon juice, black pepper, and salt until evenly coated.
  • Fold in chopped Romaine, diced cherry tomatoes, red onion, mozzarella, and parsley just until distributed.
  • Lay a tortilla on the cutting board and spread 1/4 of the filling evenly, leaving a 1-inch border around the edge.
  • Roll the tortilla tightly from one edge to the other to form a compact log, tightening as you go.
  • Repeat with remaining tortillas and filling.
  • Wrap each roll snugly in plastic wrap and refrigerate for 30 minutes to set.
  • Unwrap and trim the ends of each roll, then slice into 1-inch pinwheels with a serrated knife.
  • Arrange pinwheels cut-side up on a plate and serve chilled.

Notes

For the best texture, keep the lettuce finely chopped and well-dried to prevent soggy pinwheels; pat tomatoes with a paper towel to reduce moisture. Rotisserie chicken works great for speed and flavor, and you can swap in Greek yogurt Caesar dressing for a lighter version. If making ahead, store rolls wrapped and slice just before serving to keep edges fresh. Whole-wheat or spinach tortillas add color and structure; slightly warm tortillas for 10 seconds in the microwave to make rolling easier. Adjust dressing to taste and avoid overfilling to ensure tight, clean slices.
