Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound chicken breast diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup onion chopped
  • 2 cups mixed vegetables frozen
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup butter melted

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Heat olive oil in a large skillet over medium heat.
  • Season diced chicken with salt and pepper and cook in the skillet until browned.
  • Add onions and mixed vegetables to the skillet and cook until onions are translucent.
  • Stir in the cream of chicken soup, chicken broth, garlic powder, and thyme; remove from heat.
  • Pour the chicken mixture into a 9x13-inch baking dish.
  • In a mixing bowl, whisk together flour, baking powder, and salt.
  • Whisk in milk and melted butter until combined.
  • Pour the batter over the chicken mixture in the baking dish.
  • Bake in the preheated oven for 40 minutes, or until the top is golden brown.
  • Let the casserole rest for 10 minutes before serving.

Notes

For added flavor, consider topping the cobbler with a sprinkle of shredded cheese or fresh herbs before baking. If you like a bit of heat, add a pinch of cayenne pepper to the batter. Make sure not to overmix the batter to ensure a light and fluffy topping. Adjust the vegetables to your preference; fresh vegetables can be used but may require additional cooking time.
