Ingredients
  

  • 2 tablespoon butter
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 clove garlic minced
  • 1 pound chicken breast diced
  • 6 cup chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1 cup ham diced, cooked
  • 1 cup Swiss cheese grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon nutmeg
  • 2 cup spinach chopped, fresh

Instructions
 

  • Heat butter and olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic and sauté until soft.
  • Add diced chicken breast and cook until browned.
  • Pour in chicken broth and bring to a simmer.
  • In a medium saucepan, whisk together heavy cream, milk, and flour until smooth.
  • Gradually add the cream mixture to the pot, stirring continuously.
  • Add diced ham, grated Swiss cheese, salt, black pepper, thyme, and nutmeg.
  • Cook, stirring occasionally, until the cheese is melted and the soup thickens.
  • Stir in chopped spinach and cook until wilted.
  • Remove from heat and let rest for 5 minutes before serving.

Notes

For the best flavor, use high-quality Swiss cheese and freshly grated nutmeg. To make the soup heartier, consider adding cooked rice or small pasta shapes. Adjust the seasoning to your taste, and feel free to add a splash of white wine or a pinch of cayenne pepper for added depth.
