Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 medium carrots sliced
  • 3 cloves garlic minced
  • 8 cups chicken broth
  • 2 cups cooked chicken shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 tablespoons butter melted
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery and sauté until vegetables are tender.
  • Stir in garlic and cook for another minute.
  • Pour in chicken broth and bring to a boil.
  • Add shredded chicken, salt, pepper, and thyme to the pot.
  • In a medium mixing bowl, whisk together flour, baking powder, and salt.
  • Stir milk and melted butter into the flour mixture until a dough forms.
  • Drop spoonfuls of dough into the boiling soup.
  • Cover the pot and simmer on low for 15 minutes.
  • Stir in chopped parsley and remove from heat.
  • Let the soup rest for 10 minutes before serving.

Notes

For the best results, ensure your dumplings are not too large, as they expand while cooking. If you prefer a thicker broth, you can add a tablespoon of flour mixed with a bit of water to the soup before adding the dumplings. Taste the soup towards the end and adjust the seasoning if necessary.
