Ingredients
  

  • 2 tablespoon olive oil
  • 1 pound chicken breast diced
  • 1 medium onion diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 3 clove garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 4 cup chicken broth
  • 1 can diced tomatoes 14 oz
  • 1 cup corn kernels
  • 1 can black beans drained and rinsed, 15 oz
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lime juiced
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced chicken breast and cook until browned.
  • Remove chicken from the pot and set aside.
  • In the same pot, add onion, red bell pepper, and yellow bell pepper, cooking until softened.
  • Stir in garlic, cumin, chili powder, and smoked paprika, cooking for 1 minute until fragrant.
  • Pour in chicken broth and bring to a simmer.
  • Add diced tomatoes, corn, and black beans to the pot.
  • Return the chicken to the pot and season with salt and black pepper.
  • Simmer the soup for 20 minutes.
  • Stir in lime juice and cilantro before serving.

Notes

For a richer flavor, you can char the bell peppers before adding them to the pot. Also, consider topping the soup with sliced avocado, shredded cheese, or a dollop of sour cream for added creaminess and texture. Adjust the spices according to your taste preference, and feel free to add more heat with jalapeños or hot sauce.
