Ingredients
  

  • 2 tablespoon olive oil
  • 1 cup onion diced
  • 1 cup carrot diced
  • 1 cup celery diced
  • 3 clove garlic minced
  • 1 pound chicken breast cooked and shredded
  • 4 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 package gnocchi (16 ounces)
  • 2 cup spinach fresh
  • 1/2 cup Parmesan cheese grated

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrot, and celery, and sauté until softened, about 5 minutes.
  • Stir in garlic and cook for an additional minute.
  • Add shredded chicken and chicken broth to the pot.
  • Bring the mixture to a gentle boil.
  • Reduce the heat to a simmer and add heavy cream, salt, black pepper, and Italian seasoning.
  • Stir in the gnocchi and cook until they float to the top, about 4 minutes.
  • Add spinach and cook until wilted, about 2 minutes.
  • Remove from heat and stir in Parmesan cheese.
  • Let the soup rest for 10 minutes before serving.

Notes

For a richer flavor, consider using homemade chicken broth. If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of water and add it to the soup before the resting period. Adjust the seasoning according to your taste, and feel free to add a pinch of red pepper flakes for a bit of heat.
