Ingredients
  

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 can chicken gumbo soup (10.5 ounces)
  • 1 small onion chopped
  • 1 green bell pepper diced
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 hamburger buns
  • 1/2 cup shredded cheddar cheese optional

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and diced green bell pepper to the skillet and sauté until softened, about 5 minutes.
  • Add ground chicken to the skillet and cook until browned, breaking it up with a wooden spoon.
  • Stir in the chicken gumbo soup, garlic powder, smoked paprika, salt, and black pepper.
  • Simmer the mixture for 10 minutes, stirring occasionally.
  • Toast the hamburger buns lightly if desired.
  • Spoon the chicken gumbo mixture onto the bottom half of each bun.
  • Optionally, sprinkle shredded cheddar cheese over the mixture.
  • Cover with the top half of the buns and let the sandwiches rest for 5 minutes before serving.

Notes

For added flavor, consider using a mix of red and yellow bell peppers or adding a splash of hot sauce for a bit of heat. If you prefer a thicker consistency, let the mixture simmer a bit longer to reduce the liquid. You can also serve these sloppy joes with a side of coleslaw or fries for a complete meal.
