Chicken Gumbo with Roasted Butternut Squash Chunks

Ingredients
  

  • 2 tablespoon olive oil
  • 1 pound chicken breast cubed
  • 1 large onion diced
  • 2 celery stalks diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 1 cup diced tomatoes
  • 4 cup chicken broth
  • 1 cup okra sliced
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 1 bay leaf
  • salt and pepper to taste
  • 2 cup butternut squash peeled and cut into chunks
  • 2 tablespoon vegetable oil
  • 2 cup cooked rice

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Toss the butternut squash chunks with vegetable oil, salt, and pepper in a mixing bowl.
  • Spread the squash on a baking sheet and roast for 25-30 minutes until tender and golden brown.
  • Heat olive oil in a large pot over medium heat and add the cubed chicken.
  • Cook the chicken until browned on all sides and remove from the pot.
  • Add onion, celery, and bell pepper to the pot and sauté until soft.
  • Stir in garlic and cook for another minute.
  • Return chicken to the pot and add diced tomatoes, chicken broth, okra, cayenne pepper, thyme, and bay leaf.
  • Bring the mixture to a boil, then reduce heat and simmer for 40 minutes.
  • Stir in the roasted butternut squash chunks and adjust seasoning with salt and pepper.
  • Simmer for an additional 10 minutes and remove from heat.
  • Let the gumbo rest for 10 minutes before serving.
  • Serve hot over cooked rice.

Notes

When making gumbo, be sure to use fresh ingredients for the best flavor. Roasting the butternut squash separately enhances its sweetness and adds a depth of flavor to the gumbo. You can adjust the amount of cayenne pepper to your desired spice level. Make sure to let the gumbo rest after cooking, as this allows the flavors to meld together beautifully.
